The first cake we ever launched and an original favourite of many! Delicious, tangy and light courgette and coconut sponge (3-layers) with a zesty, refreshing vegan lemon curd in between and coated with coconut buttercream.

Storage & Preparation: Keep refrigerated for up to 5 days. Leave to thaw till room temperature for 1-2 hours for best texture.
